Real char instead of grey stripes
The ridges are tall enough that the steaks sit above the rendered fat and actually sear. My old shallow pan just steamed everything into a sad grey. Bring it up to temperature slowly and it behaves.

Full dimensions are listed at the end of the Overview on every product page, taken from the finished piece rather than from a drawing. If a measurement matters for your space, write to us and we will check the actual item before it ships.
Care instructions ship with the product and are printed on the care label where there is one. Solid wood wants a damp cloth and an occasional oil; stone should be sealed once a year; wool and linen prefer a cold wash and drying flat.
Shipping is free on every order, with tracking, anywhere in the United States. We do not ship outside the US, so there are no customs charges or import duties on anything you order.
Orders are processed in 1 to 2 business days and most orders placed before 2pm ET leave the same day. Typical delivery is 7 to 15 days from dispatch. Tracking arrives by email as soon as the carrier scans the parcel.
Thirty days to return anything unused and in its original packaging, with all fixings included. We cover the return shipping when an item is faulty, damaged or not what you ordered. If a piece arrives damaged, send a photo of the item and the outer box within 7 days and we ship a replacement without asking for the broken one back.
Kitchen & Dining
Eleven inches of cast iron with ridges tall enough to hold meat clear of its own rendered fat, and pour spouts on both sides so you can drain it whichever hand the pan is in.

WHY THE RIDGES ARE DEEP
Shallow ridges leave meat sitting in its own rendered fat, so it steams and you get faint grey stripes instead of char. Deep ridges lift it clear, the fat runs down to the trough, and the contact points get hot enough to caramelise properly. That is where the flavour on a grill pan actually comes from.
HEAT RETENTION
Cast iron takes a long time to come up to temperature and then refuses to let go of it. Lay four cold chops onto a thin pan and the surface temperature collapses; lay them on this and it barely shifts. Preheat slowly over a medium flame — rushing iron is what cracks it.
SEASONING
Drain from whichever side suits, then wash without detergent where you can, dry it back on the hob, and wipe a thin film of oil across the ridges while it is still warm. Do that and the surface goes blacker and slicker every time you cook on it.

Sounds like a minor detail until you are holding a hot 11 inch iron pan in your weaker hand. Drained the fat off four chops with no awkward turn at the sink. Wipe oil on while it is warm and the surface keeps going blacker.
Stoneware and glass are safe in both. Cast iron, wood and anything with a wooden handle should be washed by hand and dried straight away. Every product page states which applies to that piece.
We name it on every page — stoneware, borosilicate glass, cast iron, acacia or olive wood — instead of writing "ceramic" and leaving it there. Glazes are food-safe and lead-free, and the non-stick coatings are PFOA-free.
Cast iron and anything with a magnetic base does. If a page does not mention induction, treat it as gas and electric only, or ask us and we will check the actual base. A non-stick surface lasts for years if you keep it off high heat, out of the dishwasher and away from metal utensils.
